The 18-year-old scored his second Serie A goal - and his second against the Gialloblu - as the game ticked into injury time to put the Giallorossi ahead for the first time in the match, before assisting Stephan El Shaarawy moments later to clinch a 3-1 win.
After coming on shortly after half-time with the scoreline, Volpato was understandably delighted with his late impact.
"The coach called me over and told me I needed to come on straight away," Volpato said afterwards.
"I didn't even have time to warm-up. I'm really happy, I tried my best to change the contest. I never gave up."
Asked what Mourinho had said to him after his goal, Volpato added: "He said I must be very lucky!"
The Giallorossi now have upcoming matches against Lazio and Ludogorets, where Volpato will once again hope to be involved.
"I know that I am the youngest and that I need to be patient and show respect for everyone," he said.
"Hopefully this can be a boost for us, but we have to take things game-by-game."
